Bill, who is the master knife-smith from Knife Merchant shows you two ways to see if you have the sharpest edge around.

In most paper cutting tests you've seen, the subject will hold a piece of paper, thus giving firm resistance to that piece locking it in position so the knife will slice through it easily.

In this case, very light paper is folded and then sat on a table allowing nearly 0 resistance.

In the final test, Bill rolls up a piece of paper from a magazine and tapes it to create a round loose edge and sits it on the table.

The round surface is by far much harder to cut in one swoop.

He accomplishes both of these tests with complete ease.

You don't necessarily need to be a chef to enjoy the sharpest edge your knife can achieve; you just need to want to have the best.

Master Sushi Chef Hiroyuki Terada has been using Kikuichi brand knives for over 20 years, in particular Model WGS21-08-0 which has an 8" blade and has a double sided beveled edge.

This is the knife you see in all of our videos.

His reason for choosing this knife is for the overall feel in his hand and the perfect balance between handle and blade.

He has recently added the Masahiro MH13711 which also has an 8" blade but uses the latest technology that posses a single beveled edge to put the force in the item you're cutting rather than in your fingers.

Chef Hiro is excited to add this knife to his collection which is something he hasn't explored in over 20 years.

These are the main 2 knives he uses.
